While there are several species of Rata in New Zealand, our Rata is gathered from Southern Rata tree (Metrosideros umbellate). Due to the irregular flowering nature of Southern Rata, production can varies greatly yearly making the honey supply irregular. Texture: Rata is one of the fastest crystallising honeys in New Zealand and it is market as a creamed honey. Colour: Pale White Tasting Note: A gentle soothing refreshing honey that is not too sweet and with slight salty taste - very easy on the palate.
